Cheese & Biscuits Selection

DIGESTIFS

The White Apron Restaurant would like to present its Cheese Board, which has been carefully selected by the Head Chef & “The Cheese Detective” from Pendrill’s of Cheshire. These cheeses offer a fine variety of flavor and are accompanied by oat cakes, wafers, lavender jelly, locally made tomato chutney and grapes.

GREEN’S FARMHOUSE CHEDDAR – PDO Made by Paul Green, Newton Farm, Glastonbury. John Green’s family farm is in the shadow of the legendary Glastonbury Tor on the Somerset Levels Area of Outstanding Natural Beauty. Cheesemaking has been in the family since 1917 and even today cylindrical cheddar’s are made using the time honoured traditional skills of the cheesemaker, David Higdon. Matured for over 12 months. (V)

TALEGGIO - Made in the Bergamo region of northern Italy. It is a full cream cow’s milk cheese, with a thin dark pink skin and matures with 40 days. Its flavour is delicate, mild and aromatic and the square shape makes it quite distinguished.

CASHEL BLUE – Made by Louis & Jane Grubb, The Rock of Cashel, Co. Tipperary, Ireland. Situated near to the 600ft high rock of Cashel – a local landmark, Louis and Jane began making Ireland’s first blue farm cheese with milk from their pedigree Friesian herd, in 1985. Cashel Blue is a soft, mild cheese which ripens between 6 and 12 weeks, it becomes softer and creamier over time, with the taste of flowers coming through. (V)

BUTLERS FARMHOUSE TASTY LANCASHIRE - Made by Gill Butler at Inglewhite, Beacon Fell, Lancs. The Butler family have been making Lancashire cheese the Proper way for 70 years. Family farms are close by on pasture that sits on sandstone rock between the Rivers Ribble and Lune, close to the M6, on a world class milk field. The higher the quality of milk, the more the farmer gets paid. The length of the flavour is testament to the 12 months maturation, having been handmade and wrapped in muslin. (v)

CAMEMBERT de NORMANDIE AOC - Normandy Region. This Camembert is hand ladled into moulds. It is smooth and soft with bloomy rind and at its best when fully matured.

Fairfields Estate Sauvignon Blanc is sourced from 3 separate vineyards, in the Marlborough region. Each lot was fermented separately, and then blended together. Each batch was cool fermented in stainless steel to retain varietal freshness. No oak was used. Fruit generally had good ripeness, so the resulting wine shows typical Marlborough flavours of passion fruit
