The White Apron Restaurant would like to present its Cheese Board, which has been carefully selected by the Head Chef & “The Cheese Detective” from Pendrill’s of Cheshire. These cheeses offer a fine variety of flavor and are accompanied by oat cakes, wafers, lavender jelly, locally made tomato chutney and grapes.
GREEN’S FARMHOUSE CHEDDAR – PDO Made by Paul Green, Newton Farm, Glastonbury. John Green’s family farm is in the shadow of the legendary Glastonbury Tor on the Somerset Levels Area of Outstanding Natural Beauty. Cheesemaking has been in the family since 1917 and even today cylindrical cheddar’s are made using the time honoured traditional skills of the cheesemaker, David Higdon. Matured for over 12 months. GOOSNARGH GOLD BUTLERS DOUBLE GLOUCESTER – Made by Gillian Hall at the Butlers C16th farmhouse at 500 meters above sea level and below Beacon Fell. Gillian’s parents Tom and Jean Butler fought hard to retain this historic recipe, scarcely made in Gloucestershire The flavour has peachy-orange tones, matured for 6 months, it has a firm slightly dense texture and a rich mature flavour with buttery caramel-type notes and a mellow, nutty bite. CASHEL BLUE – Made by Louis & Jane Grubb, The Rock of Cashel, Co. Tipperary, Ireland. Situated near to the 600ft high rock of Cashel – a local landmark, Louis and Jane began making Ireland’s first blue farm cheese with milk from their pedigree Friesian herd, in 1985. Cashel Blue is a soft, mild cheese which ripens between 6 and 12 weeks, it becomes softer and creamier over time, with the taste of flowers coming through. (V)
DESSERT DES TRAPPISTES – Picardie northern France. This pressed cow’s milk cheese is produced by Trappist monks at the abbey, the Mont des Cats possesses a mild-flavored smooth texture. This is one of the last artisan-made St Paulin cheeses.
MANCHEGO - La Mancha. Spain. Manchego is Spain’s best known cheese, produced in La Mancha exclusively with the milk of the Manchego sheep. It is matured for 9 months. Attractive ivory in colour the texture is firm yet rich and creamy.
